Food Safety and Hygiene Level 2 Course (Catering Focus)

This course is specifically designed for individuals who handle open food and aims to equip them with the essential knowledge and understanding required for good Food Safety Practice. The primary goal is to provide candidates with a fundamental knowledge of food hygiene and enable them to translate this knowledge into essential practical skills to effectively prevent food poisoning.

This training is particularly relevant to the catering sector, where adherence to strict hygiene standards is paramount.

1. Introduction to Food Safety ⚠️

• • Understanding Food Hazards: Learn about the three main types of food hazards:

    • Biological: Bacteria, viruses, moulds, and yeasts.

    • Chemical: Cleaning chemicals, pesticides, or toxic metals.

    • Physical: Hair, glass, metal, or packaging materials.

  • The Importance of Food Safety: Explore the legal, moral, and financial reasons for maintaining high food safety standards (e.g., preventing illness, meeting legal requirements like the Food Safety Act 1990, and protecting business reputation).

  • Food Poisoning: Understand what food poisoning is, common symptoms, and the microorganisms most frequently responsible (e.g., Salmonella, Campylobacter, E. coli).

  • The Danger Zone: Identify the temperature range ($8^\circ \text{C}$ to $63^\circ \text{C}$) where bacteria multiply rapidly, and how to control it during cooking, cooling, and holding of food.

2. Personal Hygiene

• • Handwashing: Emphasise the critical importance of effective handwashing techniques, especially before handling food, after using the toilet, and after handling raw meat/waste.

  • Protective Clothing: Detail the proper use of appropriate protective clothing, such as clean aprons, hats/hairnets, and gloves, to prevent contamination.

  • Fitness to Work: Outline the responsibility of food handlers to report illnesses, especially those involving vomiting or diarrhoea, to prevent the spread of pathogens.

  • Wound Dressings: Stress the need to cover cuts and sores with brightly coloured, waterproof dressings.

3. Cleaning

• The Difference Between Cleaning and Disinfecting: Understand that cleaning removes visible dirt and grease, while disinfecting reduces microorganisms to a safe level.

• Cleaning Schedules: Explain the necessity of having documented cleaning schedules that specify what, when, how, and by whom cleaning should be carried out.

• The ‘Six Stages’ of Cleaning: Detail the standard procedure for effective cleaning (pre-clean, main wash, rinse, disinfection, final rinse, drying).

• Safe Use of Chemicals: Provide instruction on the safe storage and use of cleaning chemicals, including reading labels and following manufacturer’s instructions.

4. Contamination

• Cross-Contamination: This is a major focus, defining it as the transfer of harmful bacteria from one substance (like raw meat) to ready-to-eat food, often via hands, equipment, or cloths.

• Prevention of Cross-Contamination: Practical steps to prevent this, including:

  • Colour-Coded Boards and Equipment: Using separate, dedicated equipment for raw and ready-to-eat foods (e.g., red for raw meat, yellow for cooked meat, blue for fish).

  • Separate Storage: Storing raw foods below and away from cooked/ready-to-eat foods in the refrigerator.

• Allergen Control: Introduce the concept of food allergens (e.g., nuts, gluten, dairy) and the procedures necessary to prevent allergic cross-contamination in the catering environment.
